Help installing Steam to a 64 bit virtual drive?

Apologies for what I'm sure is a noob question, I'm the definition of non-technical and going down a rabbit hole trying to play AoE Definitive Edition on my mac (I played AoEII on POM a few years back and hoping to get this to work too). 

Right now I'm getting an error message when trying to install the game from the steam library becaues Steam is running in a 32 bit virtual drive in POM instead of a 64 bit.  I'm able to create a new 64 bit virtual drive but when I go to install the steam application, it defaults to a 32 bit drive and I can't figure out how to get it in a 64 bit. 

I've tried searching for a solution and haven't been able to find this--can anybody help?

Are you using a script (please paste the link) or doing a manual installation ?
