I installed Steam and I can launch the game from Steam's wineprefix but if I try to change controls the game dies immediately! I'm now trying to install it with the playonlinux installer but it wants to install Steam again on a different wineprefix. Is it really necessary?

Okay. I installed Steam and Payday 2 to "Payday 2" prefix with Wine 1.7.10. Game is playable on 1.6.2 but has a serious stuttering problem (mouse skips and jumps, as do the NPC:s). FPS seems to be ok...
Tried all the options in wine -> graphics and in playonlinux configurations. GLSL has to be enabled, others can be default (otherwise can't launch the game).
I have Core2Duo E8200 + GTX460 on Xubuntu 12.04.

Mine loads pefecctly except that it crash's on keypress.
What OS are you on.

Now that I messed around with settings, mine also crashes on keypress... Maybe I have to start all over again.

Wrong alarm - just go to Wine settings -> Graphics and enable virtual desktop and mouse grabbing - that should make it playable.

Another option which seems to work is to disable all options in wine -> graphics. Still stuttering though, and seems that antialiasing isn't working. Finished one level on normal, but it was really hard as the mouse skips around :)

Here is how to make it not crash on keypress, its really odd,but works!
Okay in the wine->graphics section Check the second and third options In Libraries disable dwrite
In Display GLSL - Enabled Direct Draw - OpenGL Strict Draw-Ordering
Rest default
When you open the game, dont press anything on the keyboard, skip through the intro with your mouse and when in the menu click on the news on the bottom left, it will open a steam overlay, close the overlay and thats it. You can play now!

Does yours run flawlessly, or do you have mouse skips or other glitches? I'm wondering if my cpu is just too slow or is it something with Wine/POL.
